Celebrating Wine at Allard with Signatures

Signatures: Four French Wine Appellations in the Spotlight at Allard
To accompany the final months of 2026, the wine list at our historic bistro in Saint-Germain-des-Prés welcomes an original initiative conceived by Maison Ducasse Paris. Entitled Signatures, this experience invites guests to discover four French wine appellations from a fresh perspective.
Each month, from September to December, three wines from the same appellation are selected and offered by the glass, carafe or bottle, as well as in a tasting flight. The selection is curated by Bernard Neveu, Corporate Head Sommelier of Maison Ducasse Paris.
September: Discovering Sancerre
The first selection takes us to Sancerre, where three wines reveal different expressions of the appellation: Pascal Jolivet’s Clos du Roy 2025, Vincent Pinard’s Charlouise 2023 and Henri Bourgeois’ La Côte des Monts Damnés 2022. Bué, Chavignol and Crézancy-en-Sancerre are the three terroirs highlighted in this opening chapter. The tasting offers an opportunity to explore three interpretations of the same appellation and appreciate their subtle differences. Grape varieties, soils and winemaking techniques each contribute to the distinctive character of the selected wines. The three cuvées can be enjoyed individually or together in a tasting flight of three 8 cl pours. Clos du Roy is available at €19 per glass, Charlouise at €22 and La Côte des Monts Damnés at €18. The tasting flight is priced at €39.
October: Saint-Émilion and Château Angelus
In October, Signatures turns its attention to southwestern France, and more specifically to Saint-Émilion. This time, the three selected wines share a particular distinction: they all come from the same estate, Château Angelus. N°3 d’Angelus 2023, Carillon d’Angelus 2018 and Château Angelus 2017 offer three cuvées, three personalities and three expressions of a shared winemaking heritage. The appeal of this selection lies in the comparison itself. Although the wines share a common origin and history, each has been crafted according to its own distinct approach. The tasting reveals what sets the different cuvées from a single estate apart. N°3 d’Angelus is available at €22 per glass, Carillon d’Angelus at €50 and Château Angelus at €92. The tasting flight brings all three wines together for €108.
November: The Diversity of Châteauneuf-du-Pape
In November, the spotlight falls on Châteauneuf-du-Pape and the remarkable diversity of its soils.
Located on the left bank of the Rhône, this appellation is among the oldest in France. Its wines owe their distinctive character not only to the variety of grape varieties grown here, but also to the diversity of the terrain, where the famous rounded pebbles coexist with sandy and limestone soils. Three estates feature in this month’s selection: Domaine de Cristia’s Classique 2022, Julien Masquin’s L’Intimiste 2023 and Château de Beaucastel 2022. Once again, Signatures offers an opportunity to taste and appreciate different interpretations of the same appellation, discovering how each winemaker’s choices are expressed in the glass. All three cuvées are available by the glass, carafe or bottle. The tasting flight, priced at €58, invites guests to explore each wine and take the time to appreciate their differences. Domaine de Cristia’s Classique 2022 is available at €18 per glass, Julien Masquin’s L’Intimiste 2023 at €26 and Château de Beaucastel 2022 at €42.
December: Three Expressions of the Côte de Beaune
To conclude the year, Signatures takes us to the Côte de Beaune. This final selection brings together one red and two white wines, each particularly representative of the region: Antonin Guyon’s Savigny-lès-Beaune Les Goudelettes 2022, Joseph Pascal’s Puligny-Montrachet 2023 and Louis Latour’s Corton-Charlemagne 2019.The tasting highlights a region where each climat — Burgundy’s distinctive vineyard parcels — has its own history and personality. Savigny-lès-Beaune is available at €18 per glass, Puligny-Montrachet at €30 and Corton-Charlemagne at €65. The tasting flight featuring all three wines is priced at €75.
Extend the Experience at Allard
Signatures can be enjoyed according to each guest’s preferences. Every wine is available by the 12 cl glass, 45 cl carafe or 75 cl bottle. For those wishing to compare the three monthly cuvées, the tasting flight brings together three 8 cl pours. The selection evolves each month from September to December, introducing a new appellation, new estates and new cuvées to discover. This programme naturally reflects the spirit of Allard, where the wine list complements the cuisine and the pleasure of gathering around the table. It also offers another reason to discover our restaurant, whether for lunch, dinner or to privatise the venue for a special occasion.
